Gold stars indicate your personal favorites (common favorites are preselected the first time you run the program). Tap/click on a star to change an item's status. By default favorites are shown before other items; as you toggle the stars, the list of items will be rearranged. You can change to alphabetical sorting by going to 'Settings » Preferences'. (In Windows 8, you can open the settings using the Windows+I keyboard combination.) Alternatively, to jump to any unit, open the charms bar and choose 'Search' then type in part of the unit name or abbreviation and hit enter.

Whenever you launch Unit Conversion Professional, the app returns to the category and units you were last working in. Alternatively, you can pin commonly needed categories to the start menu for quick access. When you are in the 'Volume Conversion' screen, swipe up from the bottom of the screen to reveal the app menu bar and then choose 'Pin to Start'. A tile that takes you directly to 'Volume Conversion' will be added to the Windows start screen. (In Windows 8, you can open the application menu using the Windows+Z keyboard combination or by right-clicking with the mouse.)
